The best cookies I've ever had!

I have been so excited for this Thanksgiving season this year. Sam makes his awesome Banana Sweet Potatoes. My mother in law makes insanely good pumpkin rolls (which I miss dearly and can't wait to move back home to enjoy), and I have found the most awesomest recipe for Pumpkin Chocolate Chip cookies. They are so good I had to share the recipe. You have to make them and try them for yourself! You wont believe how super delicous they are. The batter makes 60 cookies! And there still wont be enough to satisfy the hunger, says the 5 month pregnant lady! anyway, try them!
Ingredients
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 cups (12-ounce bag) milk chocolate chips, not semisweet
  • nonstick cooking spray or parchment paper
Directions Heat over to 350 degrees F. Spray cookie sheets with non-stick spray or line them with parchment paper. Using mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly beat the flour mixture into the batter in thirds. Stir in chocolate chips. Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies or browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire rack.
( The only thing I did differently is I didn't add Ginger or Cloves. )
They are a perfect blend of pumpkin and regular chocolate chip cookies! My new obsession has been born!

Nikki, at least you didn't have a middle name to add to the confusion. I am glad that someone has as many last names as I do...I love the pumpkin cookies. I love you guys. Thanks for thinking about me on Saturday!
